WHOOOOOPPPIEEEEEEEE PIE

Im not going to lie, I saw this recipe and I was 
really intimidated. I mean, this is a LOT of dessert.
Maybe it won't be so hard?
I should probably buy some Oreos as a back up dessert 
just in case.

WHOOOPIE PIES:


Ingredients:


For the pies:
1.5 cups of flour
1 cup of cocoa powder
1 teaspoon of baking soda
1 teaspoon of salt
1/4 teaspoon of baking powder
1 stick of softened butter
1 cup of brown sugar
1 large egg
1 teaspoon of vanilla extract
1 cup of buttermilk


For the frosting:
1 8-ounce bar of cream cheese, room temperature
1/2 cup of heavy cream
2 tablespoons of unsalted butter
pinch of salt
1.5 cups of powdered sugar
1 teaspoon of vanilla extract


Directions:

First comes the pies

Preheat the oven to 350 degrees

Mix the flour, cocoa powder, baking soda, baking powder, salt & set aside.


In a separate bowl mix together the butter & brown sugar until 
light and fluffy.



Now mix in the egg & vanilla.


Slowly add the flour mixture & the buttermilk


Now spoon around 3 tablespoons of the batter into round
mounds onto lined baking sheets.


Bake for 15 minutes until fully baked.



Let these cake/cookie things cool down on a wire rack. 

Time for the frosting.

Beat together the cream cheese, heavy cream, butter & salt


Now add the powdered sugar & vanilla.


Place in the fridge for around 30 minutes, until firm.

Once chilled stuff your cream into a baggie and pipe 
onto one side of the cookie/cake.



BAM

Thats it.
It wasn't so hard, just time consuming.

TRICK OR TREAT

Tis the season & I'm hosting another halloween party.
After scouring Pinterest I found a few fun/creepy/gross
snacks to serve to all my victims friends.

Here is a fun & easy one that everyone seemed to enjoy.

COOKIE TEETH!!



Ingredients:

Prepared cookie dough
Cookie icing
Mini marshmallows

Directions:

Preheat your oven to 350 degrees

Form your cookie dough into thin circles & space
evenly on your lined cookie sheet.

Bake for the recommended time (about 12 minutes)


Let the cookies cool.
Once they are cool to the touch, cut them in half evenly.


Take your cookie icing (I chose red) and line the rounded half of each side





Take your marshmallows and start lining them up on top of
one halved cookie, try to get bigger ones on the end.





You can even have a tooth missing or have gaps in the teeth, make it crazy.



Now take the other half of your iced cookie and place it on top
of your marshmallows.

Let them dry for at least a few hours before you serve to ensure that they 
stay together.

Everyone really enjoyed these fun treats last night.

CHOCOLATE BREAD PUDDING


Ive had sweet bread pudding before and honestly, I'm not a fan.
They always put raisins in bread pudding and I'm like
"get your raisins out of my dessert"
I stumbled upon this recipe (it didn't have raisins in it), and thought I would give it a try.




Ingredients:
6 large eggs
1 teaspoon of vanilla extract
1/2 teaspoon of sea salt
3/4 cup of sugar
1 cup of milk
1 cup of heavy whipping cream
1 loaf of Challah
7 ounces of dark chocolate





Directions:


Preheat the oven to 350 degrees

In a large bowl, whisk together the eggs, sugar, vanilla & sea salt.





Add the milk & cream into the bowl and whisk again.






Take the Challah and slice it into 6, 1 inch slices.



Now, cube those slices.


Add those into the mixture.


Take your chocolate and roughly chop it.



Add half of the chocolate into the mixture and combine. 
Let mixture sit & soak for about 30 minutes.



Take a pan (I used my spring form pan), and grease the inside with butter.
Then pour the mixture into the pan.


Sprinkle the remaining chocolate on the top  and pop it in the oven.





Bake in the oven for around 50 minutes.

ROASTED MINI SQUASH

Costco sells the cutest little baby squash.
I'm a pretty big fan of anything mini; mainly miniature animals but anything 
tiny usually hits the spot.
I decided to keep it simple with the cuties & do some roasting.

ROASTED MINI SQUASH


Ingredients:
1 bag of mini squash
1 bulb of garlic
1/4 cup of parmesan cheese
Salt & Pepper to taste
2 tablespoons of olive oil

Directions:

Preheat oven to 400 degrees.

Rinse off the squash & dry.



Chop off the tops & bottoms of the squash.

Take as many garlic cloves as you like and chop them up.



Put the squash & chopped garlic in a large bowl & toss with 
parmesan cheese, olive oil, salt & pepper.




Put the veggies in an oven safe dish & bake for 30-45 minutes.
Check the squash often &mix around so it all gets browned.
The squash should be tender.



Thats it! 
A super simple & tasty side dish.
